Quick and easy nutritious breakfast the whole family can enjoy

This is one of our favourite family breakfasts and is packed full of protein, fibre and antioxidants. Also by changing one or more of the ingredients you can create lots of different combinations to suit your tastes.

Oat and chia seed pudding:

Ingredients: (Serves 2)

1 1/2 bananas mashed

1 Cup of oats

1 1/2 cups of coconut milk or other plant based milk.

2 tablespoons of chia seeds

1/2 tablespoon of vanilla

Mix the ingredients together in a bowl and leave overnight in the fridge.

In the morning spoon into glasses or bowls and top with blueberries, coconut and mango (any fruit can be used).

For tasty variations try adding cacao nibs (2 tablespoons) and cacao powder (2 tablespoons) to the mix. This gives a wonderful chocolate flavour. Other optional ingredients include chopped walnuts, pecans or pistasios.
